  • 1 cup mashed cooked sweet potato
  • 3 tablespoons sugar
  • ¼ teaspoon cinnamon
  • 1/3 cup chopped toasted pecans
  • ¼ cup brown sugar
  • 1 tablespoon corn syrup
  • ½ teaspoon vanilla
  • 1 egg white
  • 2 2.1 ounce packages mini phyllo shells

Instructions

  • Preheat oven to 350 degrees.
  • In a medium bowl, combine the mashed sweet potato, sugar, and cinnamon.
  • In a separate bowl, combine the toasted pecans, brown sugar, corn syrup, vanilla, and egg white, stirring well.
  • Fold the pecan mixture into the sweet potato mixture.
  • Spoon about 1 teaspoon of the mixture into each phyllo shell and smooth out the tops.
  • Place the filled shells on an ungreased baking sheet and bake for 20 minutes until set.
