Instructions
- Preheat oven to 350 degrees.
- In a medium bowl, combine the mashed sweet potato, sugar, and cinnamon.
- In a separate bowl, combine the toasted pecans, brown sugar, corn syrup, vanilla, and egg white, stirring well.
- Fold the pecan mixture into the sweet potato mixture.
- Spoon about 1 teaspoon of the mixture into each phyllo shell and smooth out the tops.
- Place the filled shells on an ungreased baking sheet and bake for 20 minutes until set.
