With Passover’s dietary restrictions, making a Seder menu can be challenging. With the absence of grains, potatoes are typically the star of the table, with crispy potato kugel, silky mashed potatoes, or golden roasted potatoes nestled under a juicy brisket. This year, I’m looking for inspiration beyond my Bubbe’s recipes, and to internet famous dishes that have made potatoes into pieces of art.
Accordion Potatoes
Accordion potatoes get their name from their unique shape, made by slicing shallow slits into potato, with skewer ‘bumpers”. They are then stretched to reveal a stunning waffle pattern, and threaded onto skewers, and roasted until crisp and golden. Made popular on TikTok, I ramped it up in honor of Passover. I’ve soaked the potatoes in salt water, and topped them with a parsley gremolata, similar to the tradition of dipping parsley in salt water at the Seder table.
The 15-Hour Potato
The 15-hour potato has been incredibly popular, with a painstaking process of coated paper-thin potato slices with duck fat, layering, baking, chilling, and finally frying the potato before serving. The traditional recipe uses duck-fat, which I’ve replaced with a mixture of olive oil, coconut oil, potato starch, and garlic powder for a vegetarian alternative that is equally delicious. I serve the potatoes with a healthy spoonful of horseradish and a sprinkling of flaky salt. While 15 hours for potatoes seems excessive, and the Israelites were unlikely to have 15 hours to make these (in that case, they could have waited for their bread to rise!), the result is something truly spectacular.
