These aren't your average pizza rolls. We're ditching the tomato sauce and embracing a mix of fresh herbs like thyme, rosemary, chives, and oregano. Blended with garlic and butter, they create a fragrant base that infuses the entire dish. Each bite is a delightful explosion of textures and flavors making it the perfect dish for your Shavuot feast, our favorite dairy holiday.
Ingredients
- 1 pound prepared pizza dough
- 1 bunch fresh thyme
- 4-6 sprigs rosemary
- 1 large handful fresh chives
- 4-6 sprigs fresh oregano
- ¼ cup butter melted in the microwave (50 grams)
- 5-6 cloves garlic chopped
- Salt and pepper to taste
- 1 ¼ cup ricotta cheese 300 grams
- â…” cup cream cheese 150 grams
- ½ cup grated mozzarella 100 grams, divided
- ½ cup grated parmesan 50 grams, divided
- Salt and ground black pepper to taste
- Egg yolk for brushing

Instructions
- Line a casserole dish with parchment paper. Preheat oven to 350°F.
- Lay another piece of parchment paper on the counter and roll out the pizza dough over top.
- Prepare herbs by separating the leaves from the stems. Finely chop thyme, rosemary, chives, and oregano. Stir well.
- Add half the greens mixture to a blender or food processor with melted butter, garlic, salt and pepper and grind well.
- In a separate bowl mix ricotta, cream cheese, ¼ cup mozzarella, ¼ cup parmesan, salt and pepper to form a uniform batter.
- Spread herb mixture over dough. Top with an even layer of cheese mixtures. Sprinkle with remaining chopped herbs. Roll up dough jelly roll style and wrap with parchment paper. Place in freezer for about 15 minutes to cool.
- Cut into 12 equal pieces using dental floss as seen in video or with a sharp knife. Arrange in prepared casserole.
- Mix egg yolk with 1 tablespoon cold water and brush over dough. Sprinkle with remaining mozzarella and parmesan.
- Bake in an preheated oven for about 40 minutes or until golden brown.
