For the Filling:

  • 9 medium-sized Pink Lady apples peeled and sliced
  • 1/4 cup lemon juice
  • 1/4 cup honey

For the Crumble Topping:

  • 3/4 cup coconut oil
  • 1/2 cup coconut sugar
  • 1/4 cup silan date syrup
  • 1 3/4 cups quick oats
  • 1 1/2 cups white spelt flour
  • 2 1/2 teaspoons Jamie Geller Hawaij for Coffee
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  • 1.⁠ ⁠Preheat oven to 350°F (175°C).
  • 2.⁠ ⁠In a medium bowl, combine the coconut oil, coconut sugar, silan, quick oats, white spelt flour, hawaij for coffee, salt, and vanilla extract. Mix well until the mixture reaches a crumbly texture. Set aside.
  • 3.⁠ ⁠In a large bowl, combine the sliced apples, lemon juice, and honey. Toss until the apples are evenly coated. Transfer the apple mixture to a large round baking dish.
  • 4.Evenly sprinkle the prepared crumble topping over the apples in the baking dish.
  • 5.⁠ ⁠Place baking dish in the preheated oven. Bake for 45-55 minutes, or until the topping is golden brown and the apples are tender and bubbling. You may want to cover the dish towards the end of baking to prevent the topping from burning.
  • 6.⁠ ⁠Remove from oven and allow to cool slightly before serving.
