- 1/2 cup Panko crumbs or whole wheat bread crumbs

Instructions
- Preheat the oven to 425°F and liberally coat a large baking sheet with cooking spray.
- Prepare the coating: in one shallow bowl, place the spiced mayonnaise, and in another, combine the bread crumbs and flaxseed.
- Dip each chicken breast strip into the spiced mayonnaise, dredge it in the crumb mixture, and place it on the prepared baking sheet.
- Lightly coat the breasts with cooking spray.
- Bake for 20 minutes, turning the pieces once, until the chicken is no longer pink inside and the juices run clear.
