While making your own puff pastry or filo dough is possible, most home bakers use frozen dough to streamline the process and make it possible to whip up your own on the regular. Unlike knishes, bourekas are often topped with seeds (sesame seeds, in particular), but poppy seeds, nigella seeds, or even everything bagel seasoning may be used! Ingredients

Servings 12 bourekas
  • 2 sheets 1 box frozen puff pastry, thawed
  • 1/3 cup feta cheese
  • 2/3 cup ricotta cheese or farmer’s cheese
  • 2 eggs divided
  • 1 teaspoon black pepper
  • ¼ teaspoon sea salt
  • Sesame seeds to top

Instructions

  • Preheat the oven to 375°F. Line a tray with baking paper.
  • In a medium bowl, combine feta cheese, ricotta cheese, 1 egg, pepper, and sea salt.
  • On a lightly floured surface, unfold the puff pastry. Slice each piece of the dough into 6 squares.
  • Place about 1 tablespoon in the center of each square. Dip your finger in water to gently moisten the edges to help join the two corners.
  • Fold the dough by joining two opposite corners to make a triangle, pressing with a fork to seal.
  • Whisk the remaining egg and use a pastry brush to brush the tops of the pastry, and sprinkle with sesame seeds.
  • Bake for 20-25 minutes, or until golden brown.
