Ingredients
- 2 sheets 1 box frozen puff pastry, thawed
- 1/3 cup feta cheese
- 2/3 cup ricotta cheese or farmer’s cheese
- 2 eggs divided
- 1 teaspoon black pepper
- ¼ teaspoon sea salt
- Sesame seeds to top

Instructions
- Preheat the oven to 375°F. Line a tray with baking paper.
- In a medium bowl, combine feta cheese, ricotta cheese, 1 egg, pepper, and sea salt.
- On a lightly floured surface, unfold the puff pastry. Slice each piece of the dough into 6 squares.
- Place about 1 tablespoon in the center of each square. Dip your finger in water to gently moisten the edges to help join the two corners.
- Fold the dough by joining two opposite corners to make a triangle, pressing with a fork to seal.
- Whisk the remaining egg and use a pastry brush to brush the tops of the pastry, and sprinkle with sesame seeds.
- Bake for 20-25 minutes, or until golden brown.
