A blintz souffle is the perfect way to serve blintzes family style, it’s commonly made using prepared frozen blintzes and it is usually sweet, but for this version we made our own savory truffle mushroom blintzes and went full on savory.
It’s the perfect brunch or lunch dish to serve a crowd, it can be prepped ahead, it can be reheated and it can even be frozen.
Ingredients
Servings 4 servings
- 4 truffle mushroom blintzes or other savory blintzes
- ¼ cup sour cream
- ⅛ teaspoon truffle oil optional
- ½ tablespoon milk
- ¼ teaspoon black pepper
- 1 egg
- ½ tablespoon room temp butter
- Pinch salt
- Garnish: Parmesan and black pepper and fresh thyme

Instructions
- Preheat oven to 350℉. Place blintzes in a 5x5-inch pan.
- In a medium bowl, mix together sour cream, truffle oil, milk, black pepper, egg, butter and salt. Pour mixture over blintzes.
- Sprinkle with Parmesan and black pepper. Bake, uncovered, at 350℉ for 30 minutes, until puffed and golden.
- Garnish with thyme and serve.
