The blessing we make after washing our hands before eating bread is “Blessed are you God, Master of the universe, who sanctified us with mitzvot, and commanded us with the lifting up our hands.” What an unusual blessing. Why doesn’t the blessing talk about washing our hands, why lifting them up? The answer is because we are about to eat, and the hands are the tools we are going to use to break bread and eat the food. The lifting up of the hands before the meal begins is how we become aware of the spiritual nature of the meal. A blintz souffle is the perfect way to serve blintzes family style, it’s commonly made using prepared frozen blintzes and it is usually sweet, but for this version we made our own savory truffle mushroom blintzes and went full on savory.

It’s the perfect brunch or lunch dish to serve a crowd, it can be prepped ahead, it can be reheated and it can even be frozen.

Instructions

  • Preheat oven to 350℉. Place blintzes in a 5x5-inch pan.
  • In a medium bowl, mix together sour cream, truffle oil, milk, black pepper, egg, butter and salt. Pour mixture over blintzes.
  • Sprinkle with Parmesan and black pepper. Bake, uncovered, at 350℉ for 30 minutes, until puffed and golden.
  • Garnish with thyme and serve.
