  • 6 turkey wings
  • 1 ½ teaspoons salt
  • ¼ teaspoon pepper
  • 1 tablespoon Jamie Geller Sumac
  • 1 tablespoon garlic powder
  • ½ tablespoon cumin
  • 1 tablespoon baking powder

Sauce

  • 1 cup whole dried cranberries frozen will work too
  • ¾ cup pomegranate juice
  • ¼ cup brown sugar
  • ¼ teaspoon orange zest
  • ¼ teaspoon salt
  • 1 cup water

Garnish

  • Pomegranate arils
  • Parsley leaves

Instructions

  • Preheat oven to 350℉.
  • Pat and dry wings with a paper towel.
  • In a small bowl mix salt, pepper, sumac, garlic powder, cumin and baking powder. Rub the turkey wings with spice mix until coated all over.
  • Place spiced wings on a sheet pan and roast for about 1 hour, flipping as needed, until crispy and golden.
  • In a saucepan add cranberries, pomegranate juice, brown sugar, orange zest, salt, and water. Bring to a simmer and cook until cranberries soften. Once soft, blend with an immersion blender.
  • Coat the wings in the sauce then return to the oven for 5-10 minutes. Garnish with parsley and pomegranate and enjoy.
