  • 5 large sweet potatoes peeled and cubed into 1-2 inch pieces
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon paprika
  • 3 sprigs fresh thyme
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon ground black pepper
  • cup canola oil or melted coconut oil
  • 2 teaspoons honey

Instructions

  • Preheat oven to 375°F. If you have a convection oven setting, this is a good time to use it.
  • Lay the sweet potatoes in a single layer on a roasting tray. Sprinkle generously with onion powder, garlic powder, paprika, thyme, salt and pepper. Drizzle with oil and honey. With your hands, toss and coat potatoes thoroughly.
  • Roast for 25 to 35 minutes in oven or until lightly browned. Serve warm.
