- 5 large sweet potatoes peeled and cubed into 1-2 inch pieces
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 1 teaspoon paprika
- 3 sprigs fresh thyme
- 1 ½ teaspoons kosher salt
- ½ teaspoon ground black pepper
- ⅓ cup canola oil or melted coconut oil
- 2 teaspoons honey

Instructions
- Preheat oven to 375°F. If you have a convection oven setting, this is a good time to use it.
- Lay the sweet potatoes in a single layer on a roasting tray. Sprinkle generously with onion powder, garlic powder, paprika, thyme, salt and pepper. Drizzle with oil and honey. With your hands, toss and coat potatoes thoroughly.
- Roast for 25 to 35 minutes in oven or until lightly browned. Serve warm.
