Matzah Brei is one of my favorite Passover foods and I don’t even like eggs. It’s one of those traditional dishes where every family has their way of making it and it’s based on the same idea as French toast. Usually the matzah is soaked in water before adding eggs and frying in some butter or oil. It can be made sweet or savory and with any add-ins or flavors you like. Read more about Matzah Brei here.

This version keeps it simple with just a bit of cinnamon and maple syrup with a nod to traditional French toast. The main change I made from most matzah brei is instead of soaking in water first, I soaked the matzah in a mix of eggs and milk. It needs to soak a bit longer this way but the rich flavorful result is worth it.

Ingredients

Servings 4 servings
  • 2 eggs
  • ¼ cup milk
  • 2 teaspoons cinnamon
  • 1 tablespoon maple syrup
  • ¼ teaspoon vanilla
  • 4 sheets matzah
  • Butter for frying
  • Fresh fruit and powdered sugar for serving

Instructions

  • In a medium sized bowl mix together eggs, milk, cinnamon, maple syrup, and vanilla.
  • Cut your sheets of matzah into quarters, then soak the matzah in your milk mixture for about 20 minutes.
  • Once the matzah gets pretty soggy, heat a cast iron pan with some butter. Fry your matzah until golden brown and flip to cook the other side.
  • Once fully cooked, serve with fresh fruit and powdered sugar.

Can this be made in a regular frying pan if you don’t have a cast iron?
