Aranygaluska, a beloved Hungarian treat often likened to monkey bread or butter puffs, has been cherished by Jewish immigrants for generations. This rich, indulgent cake emerged as a possible adaptation of German Dampfnudeln, traditionally served with fish or soup. While the original recipe was often enjoyed with savory accompaniments, it has evolved into the sweet delight we know today covered with brown sugar and walnuts and often served with vanilla custard.

  • 1 tablespoon active dry yeast
  • 1 cup warm dairy free milk 235 ml
  • ½ cup sugar plus 2 tablespoons, 100 g
  • 4 large eggs
  • Zest of 1 orange
  • 1 teaspoon vanilla extract
  • 1 cup plus 4 tablespoons unsalted vegan butter at room temperature, divided, 282 grams
  • 5 cups unbleached all-purpose flour 525 grams
  • 1 teaspoon salt
  • 2.5 cups ground walnuts 350 g
  • 6 tablespoons brown sugar 83 g
  • 1 tablespoon cinnamon
  • 1 cup apricot jam 175 g

Instructions

  • Dissolve yeast in the warm dairy free milk in the bowl of a standing mixer equipped with a paddle attachment. Add ¼ cup sugar, eggs, orange zest, vanilla, and ½ cup vegan butter. Gradually add flour and salt, beating until mixed. Cover the bowl and leave for an hour, or until dough has about doubled in size.
  • Preheat oven to 350°F and grease a 10-inch round pan with some of the remaining vegan butter.
  • Melt remaining vegan butter in a small bowl. In a separate bowl, mix the walnuts, brown sugar, remaining white sugar, and cinnamon.
  • Roll dough into a ½-inch-thick circle. Using a 1-inch cookie or biscuit cutter, cut circles of dough. Dip the circles first in the melted vegan butter, then in the nut mixture and set in prepared pan, almost touching each other. After a layer is completed, spoon over dollops of jam. Make a second layer, filling in the holes with dough, then jam, continuing and rerolling until the dough and jam is used, covering the top with remaining walnut mixture.
  • Bake in oven for 35 to 40 minutes, or until golden brown and set. Leave in the pan for a few minutes, then turn over onto a plate and serve warm. You can either cut the cake or pull the sections apart. Serve for a sweet breakfast treat, or as a dessert, with vanilla custard or ice cream.

This recipe can be prepped ahead and set in the pan overnight in the fridge to be baked up fresh in the morning for serving for breakfast.

Came out amazing. Might be better as a breakfast coffee cake than a dessert though.

Gummy texture, weird. The recipe calls it apple cinnamon pull apart but there are no apples in the recipe. There is no indication of what size pan to bake it in. Skip this one

So sorry to hear, ours wasn't gummy at all. We updated the name, the apple was a mistake. It says a round 10-inch pan

Apples are also not mentioned in the instructions. Perhaps the name of the recipe should be "Apricot Cinnamon Cake." I searched online and found other, similar recipes, also using apricot jam.
