Wine is the traditional symbol of joy that is used on many festive occasions. The Jewish people are compared to wine in a number of places in scripture, and the metaphor is pretty accurate. Wine takes time to produce, but also has to go through quite a process. In order to make delicious wine or grape juice, the grape has to be crushed in order to bring out its true potential. And just as wine also improves with age, we want our lives to improve with age too! Understand more about the symbolism of wine.

Possibly my most favorite dessert ever, and no I’m not sharing any of this and may eat the leftovers for breakfast...yes, that sounds really good. Can be made with other fruit of your choice.

Ingredients

  • 8 fresh peaches – peeled pitted and sliced into thin wedges
  • 2 tablespoons sugar
  • 1 tablespoon brown sugar
  • 1 teaspoon fresh lemon juice
  • 2 teaspoons cornstarch
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 8 tablespoons unsalted margarine chilled and cut into small pieces
  • pareve ice cream optional

Instructions

  • Preheat the oven to 375°F.
  • In a large bowl toss peach wedges with white and brown sugar, lemon juice and cornstarch.
  • For the topping: In a large bowl combine flour, 1 cup sugar and brown sugar, baking powder, salt, cinnamon and margarine. Mix by hand until large crumbles form.
  • In a large oven-safe dish pour peach mixture and sprinkle topping over the entire top.
  • Bake for about 45 minutes until the top is golden and crispy. Serve warm with pareve ice cream on top.
