  • ¾ cup cottage cheese—use at least 2% fat

  • 1 teaspoon flax seeds not ground

Instructions

  • In a blend, blend cottage cheese, egg, flax seeds, and spices until smooth.
  • Preheat oven to 375℉/190℃. Line a sheet pan that is at least 9x13-inches with parchment paper.
  • Pour batter into prepared pan and spread it out in one even rectangle layer (doesn’t need to fill the pan).
  • Bake for 30-35 minutes until the crust browns.
  • Let cool for 5 minutes before enjoying with your favorite sandwich fillings.

how long can the flatbread last? refrigerator?

I find it is best the day it is made, but you can store in the fridge for a few days and reheat before using.
