Salmon is a favorite type of fish for it’s ease of cooking and delicious taste. This recipe takes a whole side of salmon and wraps it up with a layer of flavorful sauce, a layer of chopped pistachios and finally a lattice pattern of golden pastry. It’s elegant, it’s tasty, it’s easy and the perfect dish for a festive meal. We love it for Purim when it is customary to eat hidden foods, just like we dress up and hide ourselves the way Queen Esther did in the Purim story we also like to hide our foods.
Ingredients
- 2 tablespoons olive oil
- 4 teaspoons honey
- 2 tablespoons Dijon mustard
- Salt and pepper to taste
- 1 whole side of salmon
- 1 ¼ cup ground pistachios not roasted (150 grams)
- Rolled puff pastry
- 1 egg beaten
- Garnish: sesame seeds

Instructions
- Preheat oven to 350℉. Line a sheet pan with parchment paper.
- In a small bowl mix olive oil with honey, Dijon, salt and pepper.
- Lay salmon on prepared pan and spread with sauce. Sprinkle with ground pistachios.
- Cut puff pastry into strips and lay dough strips on a diagonal over the fish in two directions like the picture and video.
- Brush dough with egg and sprinkle sesame seeds over top. Place in oven for 25 minutes.
