None of the rubs that I make have salt in them, because I always salt my meat separately. Learn more about How To Brine Your Meat For Maximum Flavor here. Always label the bottle or bag of spice so you can salt accordingly.

You can use this rub on everything from steak to chicken to vegetables.

  • ¼ cup instant coffee
  • ¼ cup garlic powder
  • ¼ cup paprika
  • 2 tablespoons ancho chili
  • 2 tablespoons onion powder
  • 2 tablespoons pepper

Instructions

  • Coat steak or roast generously with rub before cooking. This would work great on steaks or a roast in the oven!
  • How do you know when it’s done? We recommend medium rare. I LOVE my instant thermometer and it’s my most invaluable tool. Reminder: Rare is 125-130℉, medium rare is 130-140℉, medium is 140-150℉, and well done is 150℉+.
