Thought ribs were off the table if you’re vegan or eating healthy? Think again! These meat-free “ribs” are made with just 3 ingredients!

What are corn ribs?

Corn ribs are quartered pieces of a cob of corn, roasted or air fried until crispy, and tossed with sauces and spices. Like many unique eats, corn ribs have taken the internet by storm, and have been trending on Tiktok over the past few months. I don’t know why, but eating corn ribs is way more fun to eat compared to the traditional cob of corn. Similar to meat-ribs, you gnaw the “meat” or kernels off the rib. It’s messy and delicious - just how corn should be!

What is Harissa?

Harissa is a spice blend from North Africa and Middle Eastern cuisine known for its depth of flavor and spice. Harissa can be found in a powder, paste, or sauce form, and is often made with red chillies, cumin, caraway, coriander, paprika, and garlic… among many other spices! It is often used in soups, stews, and tagine. You can also find Rose Harissa, made with rose petals! Harissa sauce is a common topping in Sabich and Shawarma - but I love adding it to eggs, sandwiches, and roasted vegetables.

I love using Jamie Geller Harissa for this recipe. It is the perfect amount of flavor with a kick!

Ingredients

Servings 4 Servings
  • 2 whole cobs of corn
  • 2 tablespoons olive oil
  • 1 tablespoon Jamie Geller Harissa Seasoning
  • ¼ cup fresh cilantro chopped
  • cup plain yogurt or labneh for dipping (optional)
  • Optional: cilantro and lime juice for serving

Instructions

  • Preheat the airfryer or oven to 400°F.
  • Cut the corn cobs in half lengthwise and then quarter into 8 wedges per cob.
  • Add to a bowl and drizzle with oil and Harissa seasoning.
  • Add to the air fryer basket and cook for 10-12 minutes, shaking halfway through. Alternatively, place on a parchment lined sheet pan and bake for 25-30 minutes.
  • Meanwhile, add the yogurt to a small bowl, top with a little extra harissa if you desire.
  • Serve the corn ribs with cilantro, lime and/or yogurt.
  • Enjoy!
