Wine is the traditional symbol of joy that is used on many festive occasions. The Jewish people are compared to wine in a number of places in scripture, and the metaphor is pretty accurate. Wine takes time to produce, but also has to go through quite a process. In order to make delicious wine or grape juice, the grape has to be crushed in order to bring out its true potential. The perfect accompaniment to traditional Uzbek Plov is Shikarop, a thinly sliced tomato and onion salad.

My family keeps it really simple, just thinly sliced tomatoes and onions, seasoned exclusively with salt.

Alternatively, this version adds a bit more flavor and would taste great alongside plov.

  • 1 white onion sliced thin
  • 2 medium tomatoes sliced thin
  • 1 teaspoon oil
  • ½ teaspoon salt
  • ¼ teaspoon paprika
  • ¼ teaspoon freshly cracked black pepper

Instructions

  • Fresh cilantro
  • Place sliced onion in a bowl and cover with boiling water, let sit 5 minutes.
  • Drain onions and place back in bowl, add oil, salt, paprika, pepper and cilantro.
  • Toss and serve.
