Did you ever think hamantaschen resemble mini pies? Well we did and that inspired this genius hack to make the easiest hamantaschen ever. Pick up some prepared pie dough and prepared pie filling and they almost make themselves. For this version we went with lemon pie filling and for a little extra flare we dipped one side in white chocolate and sprinkled with lime zest.

If you can only find frozen pie dough shells, let thaw and simply roll them out on a floured surface.

Servings 24 cookies
  • 1 pound frozen pie dough thawed completely
  • ½ cup lemon pie filling

  • powdered sugar
  • white chocolate melted
  • lemon zest or lime zest

Instructions

  • Preheat oven to 375°F. Line 2 cookie sheets with parchment paper.
  • Dust countertop and rolling pin with a little flour. Roll out pie dough to ¼-inch thickness.
  • Cut out 3-inch circles with a round cookie cutter or even a drinking glass. Place 1 teaspoon lemon pie filling in the center of each circle. Fold the left side over the filling into the center, then fold the right side over and then fold the bottom up, creating a triangle, pinch points to secure.
  • Place hamantaschen on prepared cookie sheets and bake for about 10-12 minutes, until just golden.
  • Let hamantaschen cool then decorate as desired. In the photo we melted white chocolate to drizzle and dip and finished with lime zest.
