Chocolate Brownie Base Ingredients

  • 312 g Butter
  • 469 g Sugar
  • 250 g Eggs
  • 150 g Cocoa powder
  • 10 ml Vanilla extract
  • 3 g Salt

Almond Cream Ingredients

  • 1 L Almond milk
  • 500 g Egg yolks
  • 150 g Sugar
  • 100 g Cornstarch
  • 200 g Semi-dark chocolate

Chocolate Sauce Ingredients

  • 350 g Semi-dark chocolate
  • 300 g Almond milk
  • 75 g Glucose syrup

Instructions

Chocolate Brownie Base Method (suggested)

  • Melt the butter and mix with the sugar until well combined.
  • Gradually incorporate the eggs, mixing continuously.
  • Add the cocoa powder, salt, and vanilla extract.
  • Mix until fully combined.
  • Bake in tart molds according to the desired size and format.

Almond Cream Method

  • Heat the almond milk.
  • Whisk the egg yolks with the sugar and cornstarch until smooth.
  • Gradually pour the hot almond milk over the yolk mixture, whisking constantly.
  • Return the mixture to the heat and cook until thickened.
  • Remove from heat and add the chocolate, stirring until melted and smooth.

Chocolate Sauce Method

  • Heat the almond milk with the glucose syrup.
  • Pour the hot mixture over the chopped chocolate.
  • Emulsify until smooth and glossy.
