3 Layered Vegetable Kugel

If you’ve ever cooked for a family you know it’s almost impossible to make everyone happy. Everyone has their specific likes and dislikes and the foods that are their favorite. So how can you make everyone happy?

Make it layered! Make something for everyone in one complete dish. For this kugel we layered a zucchini layer on top of a sweet potato layer which is on top of a potato layer and it’s oh so good. In Judaism there is an idea called Shalom Bayit, which means peace in the home. In fact, getting along with our family and keeping the peace is a core Jewish value. So why not use our food to send a message. If these three layers of kugel can all get along, so can we.

Ingredients

Servings 8 Servings

Sweet Potato Layer

  • 2 medium sweet potatoes about 2 cups shredded
  • 2 carrots about 1 cup shredded
  • onion
  • 2 eggs
  • 1 tablespoon all-purpose flour
  • Salt and black pepper

Zucchini Layer

  • 3 zucchini about 3 cups shredded
  • onion
  • 2 eggs
  • 1 tablespoon all-purpose flour
  • Salt and black pepper

Potato Layer

  • 3 medium or 6 small potatoes about 3 cups shredded
  • onion
  • 2 eggs
  • 1 tablespoon all-purpose flour
  • Salt and black pepper

Instructions

  • Preheat oven to 180°C or 360 °F. Line the bottom of a 26 cm/10 inch springform pan with parchment paper, lightly grease the edges.
  • Grate the sweet potatoes, carrots, zucchini, potatoes, and onion separately.
  • Divide the grated vegetables into three different bowls, as follows. In the first bowl combine grated sweet potato, carrot and ⅓ onion. In the second bowl combine zucchini with ⅓ onion. In the third bowl combine potatoes with onion. To each bowl add egg, flour and salt and pepper.
  • Mix each one well and drain any excess water.
  • Into the prepared pan, pour white potato layer, then orange layer, and top with green layer.
  • Press each layer down in the baking pan.
  • Bake for 75-80 minutes, until cooked through.
  • Before cutting let it cool and enjoy.

Does it have to b made in a spring form pan or can u use glass baking dish??

You can use a glass baking dish but you will want to serve it straight from the dish.
