Salmon croquettes or cakes or patties are a quick and easy and frankly, cheap meal. They go way back to our grandparents' time when fresh fish was not as easy to get or affordable, but canned salmon was easy to keep in the pantry for last minute quick meals that are healthy and satisfying. Sure you can get fancy and use fresh salmon but if you give these a try you might just find comfort in them like so many of our ancestors.
Ingredients
- 1 15 oz. can salmon, drained
- 1 small onion finely chopped
- 2 eggs beaten
- 2 teaspoons Dijon
- 1/4 cup bread crumbs
- 1/4 cup panko
- Oil for pan frying

Instructions
- In a large bowl, mash up salmon with onion, eggs, Dijon, and bread crumbs.
- Mix together and form into small patties with your hands.
- Place panko on a plate and coat the patties with the panko and set aside.
- Heat a large frying pan with a thin layer of oil.
- Cook the patties on both sides until brown.
- Serve with a tartar sauce or try a blend of regular or pareve sour cream, dill and lemon juice.
