Salmon Croquettes

Ingredients

  • 1 15 oz. can salmon, drained
  • 1 small onion finely chopped
  • 2 eggs beaten
  • 2 teaspoons Dijon
  • 1/4 cup bread crumbs
  • 1/4 cup panko
  • Oil for pan frying

Instructions

  • In a large bowl, mash up salmon with onion, eggs, Dijon, and bread crumbs.
  • Mix together and form into small patties with your hands.
  • Place panko on a plate and coat the patties with the panko and set aside.
  • Heat a large frying pan with a thin layer of oil.
  • Cook the patties on both sides until brown.
  • Serve with a tartar sauce or try a blend of regular or pareve sour cream, dill and lemon juice.
