Sabich is a classic sandwich, traditionally eaten for breakfast but served all day at Israeli cafes. It is a popular street food in Israel that has quickly gained popularity around the world. This delicious sandwich is packed with flavorful ingredients and textures that make it a filling and satisfying meal. Sabich is typically made with pita bread, stuffed with fried eggplant, hard-boiled eggs, hummus, tahini, Israeli salad, pickles, and amba, which is a tangy pickled mango sauce. The combination of these ingredients creates a balance of savory, creamy, and tangy flavors that make every bite a delightful experience.

Ingredients

Servings 4 servings
  • 4 rolls of Frena bread or pita bread
  • 1 large eggplant sliced into rounds
  • Oil for frying
  • 4 large hard boiled eggs sliced
  • ½ cup red cabbage shredded
  • 4 pickles sliced
  • 4 tablespoons tahini
  • Kosher Salt
  • Coarsely ground black pepper
  • Amba optional

Israeli salad

  • 2 cucumbers finely chopped
  • 2 tomatoes finely chopped
  • ½ cup parsley finely chopped
  • Olive oil lemon juice, salt and pepper to taste

Instructions

  • Heat oil in a large frying pan and fry eggplant rounds, about 3-4 minutes on each side, until dark and soft. Set aside.
  • Prepare the Israeli salad, mixing the finely chopped vegetables with olive oil, lemon juice, salt and pepper.
  • Assemble your Sabich sandwich: Place your fried eggplant, hard boiled egg slices, israeli salad, purple cabbage and pickles inside your bread.
  • Pour tahini over the top.
  • Season with salt and pepper and top with amba if using.
