Instructions
- Wash the lemons thoroughly to remove any dirt or residue.
- Slice each lemon into thin rounds, about 1/8 to 1/4 inch thick (½ cm). Remove any seeds you come across.
- Layer the sliced lemons in a clean, sterilized glass jar, sprinkling a generous amount of salt between each layer.
- Once you've added a few layers of sliced lemons, press them down firmly to release some of their juices.
- Continue layering the sliced lemons and salt until the jar is filled.
- Pour fresh lemon juice over the top to completely cover the sliced lemons. This will create a brine that helps preserve the lemons.
- If any air bubbles are trapped, use a clean utensil to press the lemons down and release the bubbles.
- Close the jar tightly with its lid.
- Store the jar at room temperature for four days, allowing the salt and lemon juice to work together to preserve the lemons.
- Shake the jar gently every day to redistribute the salt and juice.
- After four days, the sliced preserved lemons should be ready to use. The rinds will become soft and flavorful.
- Keep refrigerated after opening.
