Preserved lemons add a unique and intense flavor to dishes, with a tart and slightly sweet taste. They are an excellent way to elevate the flavors of your recipes and bring a taste of the Mediterranean to your table. Remember that preserved lemons have a strong taste, so a little goes a long way. Start with small amounts and adjust according to your taste preferences.

  • 2-3 large lemons washed and scrubbed
  • 1-2 tablespoons coarse salt
  • Freshly squeezed lemon juice from 2-3 large lemons

Instructions

  • Wash the lemons thoroughly to remove any dirt or residue.
  • Slice each lemon into thin rounds, about 1/8 to 1/4 inch thick (½ cm). Remove any seeds you come across.
  • Layer the sliced lemons in a clean, sterilized glass jar, sprinkling a generous amount of salt between each layer.
  • Once you've added a few layers of sliced lemons, press them down firmly to release some of their juices.
  • Continue layering the sliced lemons and salt until the jar is filled.
  • Pour fresh lemon juice over the top to completely cover the sliced lemons. This will create a brine that helps preserve the lemons.
  • If any air bubbles are trapped, use a clean utensil to press the lemons down and release the bubbles.
  • Close the jar tightly with its lid.
  • Store the jar at room temperature for four days, allowing the salt and lemon juice to work together to preserve the lemons.
  • Shake the jar gently every day to redistribute the salt and juice.
  • After four days, the sliced preserved lemons should be ready to use. The rinds will become soft and flavorful.
  • Keep refrigerated after opening.

  • Sterilized 14 ounces (1¾ cups) glass jar with a tight-fitting lid
