Filled with a date and halva spread. If you’ve ever had this combination of flavors then you know what I’m talking about. If not, you gotta try this !!! Let me just say, these taste just as good if not better than traditional hamantaschen. No one will ever know they’re gluten free let alone vegan.
I used a 3 inch circle cutter and feel free to use any filling of your choice.
Ingredients

- 1 stick 113 grams of non dairy butter
- 3/4 cup powdered sugar 75 grams
- 1 tablespoon vanilla extract
- 2 cups almond flour
- 1 cup gluten free flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt

Instructions
- Using a stand mixer or hand held mixer, beat together your non dairy butter and sugar. Add your vanilla and beat until creamy.
- In a separate bowl, combine almond flour, gluten free flour, baking powder and salt and mix. In 3 batches, incorporate your dry into your wet ingredients. You may need to add 1-3 tablespoons water if your dough is too crumbly.
- Place dough on lightly floured counter and separate into two. Roll out dough to about ⅛-inch thickness and cut out circle shapes.
- Fill your circles with a dollop of date spread and a dollop of halva spread. Gently lift your circle dough and pinch three sides giving it its iconic hamantaschen shape.
- Place all your hamantaschen on a baking sheet lined with parchment paper and bake at 350°F for about 13-15 minutes, checking the bottom to see they’re ready.
- Enjoy as is or dust powdered sugar on top. Happy Purim
