This family style spinach and cheese fillo Bourekas will be perfect for any brunch or weekday meal!
This is a very popular dish in Israel and throughout the Middle East. It’s one of my all time favorite street foods. So easy to prepare and so delicious!😍
You can serve it with boiled eggs and fresh Israeli salad!
Ingredients

Pastry
- 1 package 16 ounces filo dough, thawed, 13x18 inches
- 1/2 cup 1 stick melted unsalted butter or 1/2 cup olive oil
- 1 tablespoon sesame seeds
- 1 tablespoon nigella seeds
Spinach & Cheese filling
- 1 pound pre-washed baby spinach leaves
- 2 cups shredded mozzarella cheese
- 1 pound feta cheese crumbles
- 1 pound cottage cheese
- 2 eggs
- Handful fresh oregano leaves
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon garlic powder
- 2 tablespoons olive oil

Instructions
- Put all the ingredients in a bowl and mix them well.
- Preheat the oven to 400°F.
- Prepare a baking pan size 12x14 inch by lightly spraying with oil.
- Prepare filling in a small bowl combine spinach, mozzarella, feta, cottage cheese, eggs, oregano, salt, pepper, garlic powder and olive oil. Mix well.
- Place half the fillo sheets (about 9 layers) on the pan and brush the top layer with melted butter or oil.
- Spread the spinach cheese filling evenly over dough. Cover with remaining fillo sheets.
- Using a sharp knife, make 3x4 squares. Brush evenly with remaining melted butter.
- Sprinkle sesame seeds and nigella seeds on top. Bake in the oven at 400°F for 25-30 minutes. Serve warm with Israeli salad and hard boiled eggs.
