Tu B’Shvat is the New Year for the trees. Its name refers to the Hebrew date on which it falls. The holiday originated in the Talmud and was based on the cycles of agriculture. After the destruction of the Second Temple new ways to celebrate the holiday were formed.

Kabbalistic tradition includes a mystical Tu B’Shvat "seder" service (conceptually similar to the Passover seder), where there is a set order to what to eat and what blessings to say, along with songs and discussion. The 16th century kabbalist Arizal taught that eating 10 specific fruits and drinking four cups of wine in a specific order can bring one closer to spiritual perfection.

It’s also become known as an ecological holiday, a time to remind us of our connection to the earth and our role in taking care of the environment. Many people give money to plant trees in Israel with this in mind.

As part of these celebrations, it’s also a time to celebrate the seven species of Israel, which are, wheat, barley, olives, dates, grapes, figs and pomegranates. So with this in mind we are sharing a seven species menu. If you like, make a traditional Tu B’Shvat Seder and serve 4 cups of wine with the seven species of fruit.

Wine Braised Lamb Stew with Dried Fruit and Olives

You can serve this hot or cold, you can make it with quick couscous or take a few more minutes and prepare it with barley or pearled couscous. The raisins add the perfect pop of sweetness.

Keep the colorful foods going with this chopped salad loaded with fruits and vegetables and chopped up for a perfect side.

Almond Pound Cake

Finish the meal with a simple pound cake, you can serve it with fruit compote or simply whipped cream or even just a cup of tea.
