i don't understand how a recipe for Pesach uses cornstarch as that is not Kosher for passover

Sephardic people eat legumes in Pessah. Some eat rice, corn, chickpeas and beans. Although there has been more and more ashkenazi people that are now incorporating kitniyot.

It is Kosher for Sephardim or you can sub potato starch for Ashkenazim
