- 1 ½ cups whole canned tomatoes
- Kosher salt
- Pinch sugar
- Freshly cracked black pepper
- 2 whole sheets matzah
- 2 small balls fresh buffalo mozzarella
- 1 zucchini thinly sliced
- 1 tomato thinly sliced
- 1 eggplant thinly sliced
- 4 teaspoons olive oil
Preheat oven to 350°F/180°C.
Crush the tomatoes by hand and season with salt, sugar and black pepper. Place the matzah on a baking sheet. Spread the tomato sauce over each piece. Place mozzarella slices and then thinly sliced zucchini, tomato, and eggplant. Drizzle olive oil over over top and season with salt and black pepper. Bake for about 10 minutes until it looks nice and cooked.
Transfer to a cutting board and enjoy.
