- 2 sheets 1 box frozen puff pastry, thawed
- 1/3 cup feta cheese
- 2/3 cup ricotta cheese or farmer’s cheese
- 2 eggs divided
- 1 teaspoon black pepper
- ¼ teaspoon sea salt
- Sesame seeds to top
Preheat the oven to 375°F. Line a tray with baking paper.
In a medium bowl, combine feta cheese, ricotta cheese, 1 egg, pepper, and sea salt.
On a lightly floured surface, unfold the puff pastry. Slice each piece of the dough into 6 squares.
Place about 1 tablespoon in the center of each square. Dip your finger in water to gently moisten the edges to help join the two corners.
Fold the dough by joining two opposite corners to make a triangle, pressing with a fork to seal.
Whisk the remaining egg and use a pastry brush to brush the tops of the pastry, and sprinkle with sesame seeds.
Bake for 20-25 minutes, or until golden brown.
