Ingredients

  • 2 sheets 1 box frozen puff pastry, thawed
  • 1/3 cup feta cheese
  • 2/3 cup ricotta cheese or farmer’s cheese
  • 2 eggs divided
  • 1 teaspoon black pepper
  • ¼ teaspoon sea salt
  • Sesame seeds to top

Instructions

  • Preheat the oven to 375°F. Line a tray with baking paper.
  • In a medium bowl, combine feta cheese, ricotta cheese, 1 egg, pepper, and sea salt.
  • On a lightly floured surface, unfold the puff pastry. Slice each piece of the dough into 6 squares.
  • Place about 1 tablespoon in the center of each square. Dip your finger in water to gently moisten the edges to help join the two corners.
  • Fold the dough by joining two opposite corners to make a triangle, pressing with a fork to seal.
  • Whisk the remaining egg and use a pastry brush to brush the tops of the pastry, and sprinkle with sesame seeds.
  • Bake for 20-25 minutes, or until golden brown.
