Challah Reuben “Grinder”

- 1 large challah loaf
- ½ cup thousand island dressing
- 2 pounds corned beef or pastrami
- 8 slices vegan white cheese
- 1 cup sauerkraut drained
Preheat the oven to 350°F.
Cut the challah in half lengthwise, and scoop out some of the middle dough, pressing down to flatten on both sides. Place it on a baking tray.
Spread both sides with thousand island dressing.
On one side, top with the corned beef or pastrami.
On the other side, add the vegan cheese sliced.
Top both sides with sauerkraut.
Transfer the tray to the oven for 10-12 minutes, or until the cheese has melted.
Slice, and enjoy.
