Manischewitz Jello Mold

Ingredients

First layer

  • Cooking spray
  • 1 cup cherry juice
  • 3 tablespoons white sugar
  • 1 unflavored gelatin package
  • ½ cup strawberries thinly sliced

Second layer

  • ½ cup water
  • 1 can sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 unflavored gelatin package

Third layer

  • 1 ½ cups Manischewitz wine
  • 1 unflavored gelatin package
  • ½ cup blueberries

Instructions

  • Spray the mold with cooking spray.
  • In a small saucepan, heat the cherry juice and sugar until dissolved.
  • Remove from the heat and add the gelatin. Stir until it begins to thicken. Let it sit for 10-15 minutes before adding the strawberries, stirring to combine.
  • Pour it into the mold and refrigerate.
  • Meanwhile, make the second layer: heat the water in a saucepan over medium heat until just simmering. Remove from the heat and add the condensed milk, vanilla, and gelatin, stirring until it begins to thicken. Set aside for 15-20 minutes while you make the final layer.
  • Add the Manischewitz to a small saucepan. Heat until it begins to simmer. Remove from the heat, and add the gelatin, stirring to dissolve. Let sit for 20-30 minutes while you finish assembling.
  • Stir the white layer and pour over the cherry layer. Return to the refrigerator until almost set, about 20-30 minutes.
  • Add the blueberries to the final layer, stirring to combine. Pour over the almost set white layer and add to the mold. Refrigerate until set and ready to serve.
  • Unmold, and slice!
