Matzah pizza is one of those foods that we only eat on Passover, but actually tastes really good and makes us wonder why? Pizza comes in many forms this is the thin cracker-like crust version and it takes minutes to prepare with the toppings of your choice and transforms dry, cardboard-like matzah into the thin crust pizza of your dreams.

We added thinly sliced veggies of eggplant and zucchini which make it taste a bit like a ratatouille pizza. You can add any toppings you like.

Ingredients

  • 1 ½ cups whole canned tomatoes
  • Kosher salt
  • Pinch sugar
  • Freshly cracked black pepper
  • 2 whole sheets matzah
  • 2 small balls fresh buffalo mozzarella
  • 1 zucchini thinly sliced
  • 1 tomato thinly sliced
  • 1 eggplant thinly sliced
  • 4 teaspoons olive oil

Instructions

  • Preheat oven to 350°F/180°C.
  • Crush the tomatoes by hand and season with salt, sugar and black pepper. Place the matzah on a baking sheet. Spread the tomato sauce over each piece. Place mozzarella slices and then thinly sliced zucchini, tomato, and eggplant. Drizzle olive oil over over top and season with salt and black pepper. Bake for about 10 minutes until it looks nice and cooked.
  • Transfer to a cutting board and enjoy.
