We use tahini on everything.  It's our go-to Israeli condiment. Whether you call it tahini, tahina, or techina, it refers to both the 100% ground sesame paste and the sauce that is most commonly found at your local falafel stand.  In it's raw 100% sesame form it is amazing in both sweet and savory recipes, but when you turn it into a sauce like we do in this recipe, it is for savory.  I like it on salads and my husband even smothers his pizza in the stuff. Initially, I was appalled when he did that. Now he has to bring home extra tahini from the pizza shop.

Serve a few spoonfuls of tahini atop the middle of a hummus platter, drizzle on a falafel sandwich or serve with grilled meat or fish.

Ingredients

  • 1/2 cup 100% raw sesame paste tahini
  • 1/4 cup water
  • 1 tablespoon lemon juice
  • 2 cloves garlic grated
  • 1 teaspoon parsley flakes
  • 1 teaspoon salt

Instructions

  • Place tahini, water, lemon juice, garlic, parsley and salt in a bowl.
  • Stir well, don’t worry when it starts to look clumpy, keep stirring, until thin and creamy; if you like it thinner, add more water to taste.
