Meals on a Stick

Spice up your Yom Tov meals with all types of fun and funky skewers.

With Yom Tov around the corner we can start thinking of ideas to serve our family and guests.

As an original cook I always wanted to enhance my table with some interesting ideas to amaze and amuse visitors, friends and family. Chancing upon some skewers I thought I could make some interesting dishes with them. An entire meal can be served with skewers and it can certainly be a winning conversation piece for those around your table.

Antipasto Skewers with Dill Dip

Impress your company with this pretty dish filled with these colorful skewers makes an interesting centerpiece and can served wonderful entrée for any meal. The recipe that follows is just to fire up your imagination, feel free to use whatever you have handy to enhance this dish.

  • 2 garlic cloves, minced
  • 1 Tbs red wine vinegar
  • 42 cherry or grape tomatoes
  • 42 baby onions
  • 1 bunch fresh basil
  • 1 (8 oz.) container tofu cut in square,
  • 1 cup fresh or marinated mushrooms
  • 8 (pareve) hot dogs cut into 1 inch slices
  • 1 1/4 cups large stuffed Spanish olives
  • 1 cup mayo
  • 2 cubes frozen garlic
  • 2 cubes frozen dill

To prepare dill dip: Combine, mayonnaise, garlic, 2 frozen dill cubes; stir well and chill for 30 minutes.

To make skewers: Thread ingredients one by one onto skewers in this order: cherry tomato, folded basil leaf, cubed tofu, mushroom,( pareve) hot dog or vegetables of choice, pearl onions another folded basil leaf, olive. Serve 2 skewers per person with a small dish filled with dip.

Grilled – Salmon Skewers

Grilled – Salmon SkewersThese salmon skewers are very flavorful and a sure asset to any occasion.

For added flavors try to find sturdy rosemary branches in the supermarket, strip the leaves, and use branches as skewers for these salmon kebabs; they’ll add a subtle, smoky flavor that hints of pine. Oil your grill well to prevent sticking; don’t move the kebabs around unnecessarily and keep a close eye on the fire to avoid flare-ups. They can also be broiled in the oven for similar results.

  • 2 tsp minced fresh rosemary (optional)
  • 2 tsp extra-virgin olive oil
  • 2 cloves garlic, minced
  • 1 tsp freshly grated lemon zest
  • 1 tsp lemon juice
  • ½ tsp Kosher salt
  • ¼ tsp freshly ground pepper
  • 1 lb center-cut salmon fillet, skinned and cut into 1-inch cubes
  • 1pint cherry tomatoes

Preheat grill to medium-high.

Combine rosemary, oil, garlic, lemon zest, lemon juice, salt and pepper in a medium bowl. Add salmon; toss to coat. Alternating the salmon and tomatoes, divide among eight 12-inch skewers.

Oil the grill rack. Grill the skewers, carefully turning once, until the salmon is cooked through, 4 to 6 minutes total. Serve immediately over your favorite grain such as couscous, angel hair pasta or rice.


For another flavor and simpler steps, marinate salmon in Teriyaki sauce and proceed as above.

 Pogo Sticks- Hot Dogs Covered in Corn BatterAs I was growing up I used to see these corn dogs on a stick sold in the weekly market. It aroused my curiosity, and I always wanted to try making them at home.

Here is a recipe for Pogo sticks- a fun food for kids.

Alternatively, try using vegetarian hot dogs or vegetables especially yellow and green baby zucchini, eggplant slices dipped in this batter, and fried to perfection, for a vegetarian meal.

  • 1 – 1 1/4 cups Almond Breeze
  • 1Tbs lemon juice
  • 1 egg
  • 1 Tbs sugar (white or brown)
  • 1 tsp salt
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 1 cup all purpose flour
  • 2/3 cup cornmeal
  • hot dogs (any variety or vegetables)

Other Equipment

  • oil for frying
  • flour for dusting
  • skewers or sticks

NOTE: Makes enough batter for 12 hot dogs or 24 mini-dogs.

Make the batter. In a mixing bowl, combine Almond Breeze and lemon juice and allow standing for a few minutes then add egg and mix well. Start with one cup Almond breeze mixture, more may be added later if needed for consistency. In a second mixing bowl, combine the dry ingredients. Make a well in the center of the dry ingredients and add liquid mixture. Stir together until combined. Batter should be thick. Adjust the amount of sugar and liquid to taste

Prepare the dogs. Dredge hot dogs in flour and dip in batter. Fry the Corn Dogs in hot oil until golden brown. When Corn Dogs are golden, place on paper towels and sprinkle lightly with salt. Insert sticks carefully.

Serve immediately.

Spicy Curry Tofu Skewers

Spicy Curry Tofu Skewers

One of the best things about tofu is how easy it is to transform its bland flavor into something memorable. These spicy, curry-flavored skewers are the perfect hors d'oeuvres for parties or gatherings. Paired with roasted mushrooms, carrots and tomatoes, these skewers are incredibly flavorful and healthy!

  • 1 block extra firm tofu
  • 3 Tbs curry powder
  • 2 Tbs extra virgin olive oil
  • 1 large tomato
  • 1 carrot, chopped
  • 2 cups baby Portobello mushrooms
  • 1 tsp sea salt
  • 1 Tbs crushed red pepper
  • 1/4 cup chopped onion
  • 2 gloves garlic
  • 2 Tbs tomato puree
  • 2 Tbs soy sauce
  • 1 tsp sugar
  • 2-3 Tbs coconut milk

Preheat oven to 375 degrees F. Grease a cookie sheet with cooking spray.

To make spicy curry sauce: Place all ingredients in a food processor or blender and process well to create a fragrant red curry paste. If too thick, add a little more coconut milk to help blend ingredients.

Place tofu into sauce and let marinate in refrigerator for at least an hour. The longer you marinate, the stronger the flavor.

While tofu is marinating, chop mushrooms, carrots and tomatoes. Place on the cookie sheet. Pour olive oil over the vegetables with sea salt and pepper.

Roast for about 12-20 minutes or until soft.

When tofu is done marinating, carefully chop into bite size pieces. Place pieces on a baking sheet and bake for 35-45 minutes until firm.

On small skewers, place tofu, carrots, tomatoes and mushrooms, interchanging between each one. Serve with extra curry sauce and enjoy!

Strawberry Pound Cake Skewers

Strawberry Pound Cake Skewers Want a super fun and creative way to serve dessert? Just look at this suggestion! In this recipe we take plump sweet strawberries and fluffy pound cake and alternate them on skewers creating a dessert on a stick! Take a few simple ingredients and create a fun dessert for all to enjoy. Get even more creative by adding a variety of fruits such as sliced peaches, blueberries or cut up melon.

Dip in sweetened whipped cream or chocolate for a fun and unique way to have your dessert.

  • 8 large strawberries (2 per skewer)
  • 1/2 a frozen pound cake, thawed and cut into 8 chunks (2 pieces per skewer)
  • 4 wooden skewers
  • Whipped cream for dipping

On a skewer, alternate strawberries and a piece of the pound cake and repeat for the remaining skewers. Add the skewers to a serving plate and serve with chilled whipped cream on the side.

Feel free to make as many as you need

Chocolate Dipped Fruit Skewers

Skewers Fruits on a skewer can be a creative way to serve dessert! Here is a suggestion. Take your favorite fruits such as strawberries, blueberries, grapes, pineapples, kiwis or melons and create a dazzling dessert centerpiece for all to enjoy. Get even more creative by melting some good quality chocolate and dip fruit into it. Refrigerate for 15 minutes until chocolate hardens, to avoid a messy treat. A surprising ending to any meal.
