  • 4 cups almond milk divided
  • 1/3 cup silan
  • 1/4 cup cocoa powder
  • 1/2 cup cornstarch or arrowroot powder
  • 1 tablespoon rose water

Instructions

  • In a large microwave safe bowl whisk together 31⁄2 cups almond milk, silan, and cocoa powder and heat for 2 minutes.
  • In a small bowl whisk together cornstarch and remaining 1⁄2 cup almond milk. 3. Whisk cornstarch mixture into warm milk mixture.
  • Place back in the microwave for 4 to 6 minutes more, whisking every 2 minutes until pudding consistency is reached.
  • Remove and whisk in rose water.
  • Pour into decorative cups for serving and cool in fridge.

I don't use high calorie almond milk. May I use standard milk?

What could I use instead of rose water?

Is there a way to make this without a microwave? I don't have one! It sounds delicious but I wouldn't know how long to bake it in a normal oven or on stovetop.

I think this recipe should have been written differently. Different microwaves with different wattages would use different times. This is what I would do:

  • In a large microwave safe bowl whisk together 31⁄2 cups almond milk, silan, and cocoa powder and heat for 2 minutes.
  • Heat 3 1/2 cups almond milk, silan, and cocoa powder in a pot on the stove until hot but not boiling.
  • Place back in the microwave for 4 to 6 minutes more, whisking every 2 minutes until pudding consistency is reached.
  • (After Step 2) Place pot back on stove and continue heating on medium heat, whisking frequently until pudding consistency is reached.

I will emphasize that I have NOT tried this, but I have enough experience cooking that I think I would start like this, then make notes for myself whether this works or not.
